Childhood memories are probably the best memory of a lifetime. At least that the case for me, and as a chef, it’s clear that my favourite childhood memory has something to do with food.
When I was about 8 or 9 years old, my mother often took me to the park for sunny weekend picnics. Nothing fancy or big, but I remember it well; her neatly prepared small basket and a large blanket packed. She usually brought small sandwiches and fresh fruit - and sweets. Not just any sweets - my favourite ones. So I always knew that when we spread the blanket on the grass and ate our sandwiches, I could look forward to some delicious sweets.
When it was finally over, our blanket looked a bit wild - there was grass everywhere, some earth and maybe a flower or two.
All these memories have become a very special dessert - The Candy Box - and it has grown to include not only my own memories of childhood sweets, but those of my colleagues from the kitchen.
As one can easily imagine, a whole lot has come together into our Candy Box - homemade gummy bears, Snickers powder, marshmallow, popcorn, popping candy, Oreos and caramelised chocolate mousse.
